The night begins with a crispy oyster with bearnaise sauce and a quiche royal with gruyere cheese and Iberian ham, we continue with a “Vitello tonnato” tuna tartar with veal loin and caviar. Next is a lobster stew with prawn ravioli and a fillet of sole with potato mousseline and white truffle, moving on to a beef sirloin au gratin with spinach leaves, shallot and celery sauce and as the finishing touch a selection of “St. Silvestre” tapas desserts.
